JOY

for the cummard family annual progressive dinner we started at the stephen's. aunt crystal made the most delicious spinach artichoke dip:
1 14 oz can artichokes (drained & chopped)
2 cups mayo
1 cup grated parmesan cheese
1 can diced green chilies
2 dashes garlic powder
1/2 package chopped spinach (drained)
bake @ 325 for 30 min. serve with crackers or bread crumbs. if serving in a bread bowl, bake for 30 min. then remove and dump into bread bowl and bake for 5 more min.
they shared an awesome thought "it is well to remember that he who gives money gives much, he who gives time gives more, but he who gives of himself gives all. let this be the description of our Christmas gifts." she also gave each person in the family a 72 hour survival kit. next stop was our house, where we had egg nog and cookie pizzas:
refrigerated pillsbury sugar cookie dough
cheryls icing:
1 lb box powdered sugar
1 cube butter
1 tsp vanilla
1/2 tsp. fresh lemon juice
add milk a little at a time, by the tablespoon until right consistency to spread.
fresh fruit on top. raspberries, blue berries, strawberries & kiwi.
it was a really busy day, parker and i didn't even have a chance to get ready before the traveling night. we watched the reflections of Christ dvd for our thought, and then headed to "town." the davy's did fajitas and cheese crisps which were very yummy and filling. they had a "bell" thought, but everyone got glued to "a christmas story" on tv in stead. the jon's was next where it was more mexican. the 7 layers of a bean dip:
re fried beans, plain or spicy
guacamole, with or without (makes 8 layers)
salsa, either home made or jarred
sour cream, plain or mixed w/ taco seasoning
cheese....lots of it
topped with green onions, tomatoes and olives.
harley read a Christmas poem which set the tone...and then of course leaves us ending at cheryl's house. we usually end with a meal at her house, but since everyone is usually full, and nothing gets eaten, she did dessert this year. she made yummy funnel cake things. which took a really long time, but were worth the wait. i'll have to get the recipe. she gave each of us 3 decorations for our trees, which she purchased at SGIA. the first one said "hope" the second "peace" and the last one said "joy." she talked about the importance of staying hopeful in these trying times. about how having peace in your heart and in your home are crucial, and will help you remain hopeful. and my favorite of all, about the blessings we receive by serving. first by serving J-Jesus, then by serving O-others, and never forgetting to serve Y-yourself. and if we do these three things, may we live a happy eternal life filled with blessings. together.
