saturday was busy, as usual. we did however slow down and take time to make wishes for the
nie's, put them in balloons, pile in the car and head to the temple. it was emotional. i could feel the spirit the second i got out of the car. everyone there, good friends and not, had special prayers in their hearts for the
nielson's. we had explained to the kids what had happened to their family. they were all very concerned and anxious to write messages of hope and love.
quincy's message was especially for
jane and
claire. we then had
home-made pizza in honor of the
nielson's.
stephanie always talks about
thier yummy grilled pizza, so after
receiving a yummy dough
recipe from cousin
carrie...we attempted. it was
disastrous, to say the least. the first batch took, what seemed like, forever. it was delicious. we made a second, since 5 pizza's couldn't be enough. we had 6 balls of dough left-over. the pizza on the grill was the best tasting, but it looked like a mess. please

carries pizza dough
ration recipe per pizza. can be 2x, 3x 4x…
recipe for 1 pizza:mix together (in bread mixer):1 ½ cups warm water1 ½ Tbl honey or sugar½ Tbl dough enhancer (optional)¾ cup cooked brown rice (or kamut, oat groat, whole millet, whole quinoa, wheat…nutritional option)1 ½ cup flour (high gluten preferred) 1 Tbl yeast.
it will be runny. let it sit in the mixer and ‘sponge’ for 10-15 min.
pulse or mix to release air (very messy).add: 2 Tbl olive oil
1 cup flour (to separate sponge from salt)on top of flour add 1 tsp saltmix and add flour a little at a time while mixer is kneading until the dough pulls away and cleans sides and bottom of mixing bowl.
then knead on counter 10- 15 min.form into a ball (should weigh about 2 lbs.) oil top if you want.
let it relax 5-10 min.
Roll out to desired size and thickness.
place it on a piece of parchment paper. oil top if you want.let it rise a bit.
top how you like.
bake at 450-500 degrees on pizza stone for 5-9 min.
